Health Inspections for May 18

The following health inspections are from the period of May 2-9 (all scores are on a 100-point scale, with points deducted depending on the severity of violations):

• Mallard's Empire Ranch Golf Restaurant Bar/Lounge, 1875 Fairway Dr., scored 98 points. The food contact surfaces of the speed gun and speed gun holster contained a buildup of debris, and were not clean.

• Mallard's Empire Ranch Golf Restaurant Main Kitchen, 1875 Fairway Dr., scored 96 points. There was no sanitizer residue detected after mechanical final rinse. The alternative method for washing and sanitizing dishware in the 3C sink was started on the spot.

• Pho Country Restaurant, 2495 N. Carson St., scored 94 points. Wet wiping cloths are lying around on food prep surfaces. There is no measurable chlorine residual in the cloths. The mop room floor and floor sink are dirty. The walls and equipment in the dishwashing room are coated with old food debris. The kitchen ceiling light fixtures and pipes and hood are coated with grease and dust. Some dust strands are more than four inches long. The walk-in door is not clean. Discussed the proper cleaning of the meat/vegetable slicer. The shelving in the dry food storage area is in need of cleaning and repainting to provide a waterproof, cleanable surface. At least one employee of this establishment must be a certified food handler during all hours of operation.
